    Step-by-Step Directions

    Prepare the Margarita Glasses

    On a small plate, mix together some salt and chili powder. Take a lemon slice and line the rim of your margarita glasses by drawing the cut lemon slice all around the rim. Once the rims of the glasses are moistened, dip each glass rim into the salt and chili powder mixture to coat it. Set the prepared margarita glasses aside.

    Make the Margarita Mix

    In a cocktail shaker or tall glass, muddle together 4 slices of jalapeno, some chunks of fresh pineapple, and a teaspoon or two of sugar. The muddling will release the flavors from the jalapeno and pineapple. 

    If you'd like to make your margaritas less spicy, remove the seeds from the jalapeno peppers, or omit them altogether. 

    Add ice cubes to fill the cocktail shaker or glass most of the way. Pour in 3-4 ounces of pineapple juice and the juice from 1 lime. Secure the lid on the cocktail shaker and shake well for 30 seconds to combine everything.

    Ingredients

    • 1 fresh jalapeno sliced and divided
    • ½ cup pineapple chunks fresh or canned
    • 1 tablespoon sugar
    • 1 cup pineapple juice store-bought or 1 cup pineapple chunks and ½ cup water, blended
    • ¼ cup fresh lime juice
    • 1 12-oz. can sparkling water
    • Fresh pineapple wedges for garnish
    • Ice
    • salt and chili for the rim or tajin spice mix

    Instructions

    • On a plate, mix salt and chili powder.
    • Moisten the rim of your glasses with a lemon slice, drawing the cut slice along the entire rim. Dip the rim of the glasses in the salt and chilli powder mixture.
    • Muddle 4 jalapeno slices, pineapple chunks, and sugar in a cocktail shaker or tall glass. Top with ice, pineapple juice, and lime juice, close the cocktail shaker and shake for 30 seconds.
    • Fill glasses with ice cubes. Pour Virgin pineapple jalapeno margarita into glasses filled with ice. Top each glass with a slice of jalapeno and spear a piece of pineapple on the rim. Serve immediately.
