Heat over medium, stirring occasionally, until sugar dissolves, about 5 minutes.
Remove from heat and let cool completely, about 15 minutes.
Store in an airtight container in the refrigerator for up to 1 month.
Notes
For flavored syrup, add herbs, spices, citrus zest, vanilla, or other flavorings along with the sugar and water.
Substitute white sugar with brown sugar to make demerara simple syrup or brown sugar simple syrup.
Can be stored in the freezer for up to 6 months. Thaw in the refrigerator before using.
